3/4" material takes a 1.25" pocket-hole screw — the length behind the large majority of pocket-hole joinery, since 3/4" is the default thickness for both hardwood plywood and surfaced solid stock in cabinet-grade work.
Why this one specifically
Most face frames, cabinet carcasses and shelf-to-side joints are built from 3/4" material specifically, which makes this the length a pocket-hole jig's default settings and most starter screw kits are tuned around. At this thickness there's enough material for the screw to seat with real holding power without the risk of blowing through the far face that a thinner 1/2" panel carries — which is part of why 3/4" plywood and solid stock became the default cabinet-shop thickness in the first place, not just a coincidence of what pocket-screw kits happen to ship with.
What moves the number
Going thicker than 3/4" (a laminated 1" panel, for instance) needs a proportionally longer screw to maintain the same holding depth in the mating piece. Fine-thread screws are generally recommended for hardwoods at this thickness and coarse-thread for softwoods and plywood — the same length applies to both, but thread type still needs matching to the material.
